Veggie Taco

Ingredients:

  • 1 Tortilla
  • 1 bunch of 50:50 spring mix with arugula, spinach, and kale
  • 1/2 cup sliced mushrooms
  • 1/2 chopped yellow pepper
  • 1/4 cup vegan cheese
  • 1/2 avocado
  • 1 tbsp sesame oil

  • Chop up your veggies, then bring your pan to medium-high heat. Saute the mushrooms and peppers with sesame oil. In another pan warm up the tortilla. As the tortilla is 60% ready add some cheese and place the lid over the pan leaving the pan on low heat. Once the veggies are ready, add them directly to the pan tortilla. Take out the taco and serve with avocados and the 50:50 mix.
