Ingredients (sweet and Sour Sauce):
- 1 tbsp cornstarch
- 1 tbsp water
- 2/3 cup of pineapple juice
- 1/3 cup rice vinegar
- 1/3 cup brown sugar
- 3 tbsp of tomato paste
- pinch of salt
Start by making the sweet and sour sauce. Mix the cour starch with water slowly until it becomes a slurry. Then start adding the other ingredients together in a pan. Turn on the heat and continuously stir the sauce so that the sauce doesn’t start to clump. Bring the sauce to a boil and then drop the temperature and let the water boil off until the consistency of the sauce becomes thick and sticky. Then you are ready to go.
The next step is to cut up the tofu into 0.5 inch cubes. Add a tbsp of sesame oil into the pan and saute the tofu. I like to add a little bit of a twist and make the sweet and sour tofu have a kick. Add 1 tsp of red
