A perfect dish for when it is cold and raining outside or really anytime.
Ingredients:
- 2 cup of lentils
- 6-8 cups of water
- 1-2 tea spoon of salt
- 1-2 tea spoon of peper
- 1-2 tea spoon of ginger
- 1 bay leaf
- 1 tea spoon of dried oregano
- 1-2 cups of cubed carrots
- 2 tbsp of olive oil
Typically, I soak the lentils the night before then strain out the water and rinse the lentils. Next, pour 6-8 cups of water into a pot and add some salt. Usually, I prefer less water, and since the lentils were soaked overnight, it would be better to use 6 cups of water. Let it come to a boil and add the lentils, spices, herbs, and oil. Once the lentils look like they are almost ready, I then add the carrots. I like the carrots to have a little bit of a crunch. Please let me know what you think.
