- Cauliflower
- Tofu
- Red peppers
- Shitake Mushrooms
To make Cauliflower rice, wash the cauliflower thoroughly and remove the greens. Then using a box grater cut the cauliflower into large chunks and use the medium size grater to grate the cauliflower into “rice” like chunks.
After grating the cauliflower, place it on a large paper towel to remove any water. This will ensure that the rice doesn’t get soggy or mushy. Transfer the cauliflower to a pan over medium heat with 1 tbsp of oil. I typically like to season with a little sea salt and pepper.
For the stir fry, cook the tofu in sesame oil, and then add your peppers and mushrooms. Once everything is almost cooked, using the sweet and sour recipe mix the sweet and sour sauce into the mix.
