In a previous post, we learned how to make socca (click here to view the recipe). The beauty of socca or farinata is that you can eat it with anything. One of my favorite ways to eat socca is with a nice salad. This salad is very simple, where I am using a 50:50 mix of baby spinach and a spring mix, mushrooms, and mandarins. From there I sprinkle some sesame oil for flavor and bon appétit, you are ready to eat a quick and delicious meal.
